HOLIDAY RECIPE: Stuffed Mushrooms

Ingredients:
 
* 24 fresh whole mushrooms
* 1 Cup mushroom pieces
* 1 can chopped crab meat
* 1/2 fine diced onion
* 1/2 Cup seasoned breadcrumbs
* 1 Tablespoon chopped parsley
* 1/4 teaspoon ea. garlic powder/salt
* Butter, as req'd
* Dash of red drinking (not cooking) wine.


Directions:

* Remove stems from mushrooms and reserve with extra mushroom pieces
* Melt butter, brush the mushroom caps w/butter, then place buttered caps on baking sheet, open side "up".
* Fine chop mushroom stems and pieces
* In skillet:  Melt butter, saute' chopped mushrooms, diced onion & crab meat - cook until onions soften.
* Stir in garlic, parsley & wine, cook for 2 mins, then transfer mix to mixing bowl
* Stir in bread crumbs evenly with bowl mixture
* Stuff reserved mushroom caps (small spoon) with the bowl contents generously
* Broil stuffed caps 15 mins (or until browned) before serving.

If traveling, make stuffed caps ahead, then broil at your destination.

That recipe sounds absolutely great.  Gotta give it a try.
However, it is short on one ingredient.
It only calls for a dash of wine, however much that might be.
Actually, I think it should be about 12 oz.  A dash for the recipe and the rest for the cook. :luff:
At least, that is the way I am going to try it.
Probably will not use it for Thanksgiving dinner, as we have more than enough planned for that.  But we will be having dinner with friends on Sunday following, so that would be a nice touch.
I will try to report back.

I love the comment about "short on the wine" but since this Covid thing hit you cannot even find mushrooms around here in the store... I miss em...

Growing up in Lancaster County PA, near enough to Kennett Square, home of many, many mushroom growers, they became something of a staple...
